This Starbucks Oat Fudge Bars Recipe is one of those copycat recipes that everyone will love. These oatmeal bars are delicious treats, a tasty after-school snack, or a simple dessert. The best part is that they are cheaper than buying them from Starbucks!
These decadent oatmeal fudge bars have me craving them just thinking about them. The next time that you want a treat, these chewy oatmeal cookie bars are a must. I seriously think about making these every time we run out. The first time I had them, I couldn't stop sneaking them from the kitchen.

Ingredients
- Butter - I use salted butter for this recipe. If you have unsalted butter just add an extra pinch of salt.
- Light brown sugar - Adds sweetness and a warm flavor.
- White sugar - For sweetness.
- Eggs - Binds the wet and dry ingredients together.
- Vanilla extract - For flavor. Vanilla will enhance the other flavors in a recipe.
- Flour - All purpose flour helps make the base of the bars.
- Baking powder - Adds texture and helps the oatmeal bars rise.
- Rolled oats - These give a chewy texture!
- Salt - Salt naturally enhances the other flavors.
- Semi-sweet chocolate chips - For that burse of chocolate flavor.
- Sweetened condensed milk - Helps the chocolate layer stay fudgy even after it cools.

How to Make Starbucks Oat Fudge Bars Recipe
Preheat the oven to 350 degrees and line a 9X13-inch pan with parchment paper.
Step One: Cream the sugars and butter in a mixing bowl.
Step Two: Mix in the vanilla extract and eggs.The first few steps are easiest with an electric mixer.
Step Three: Add the dry ingredients.
Step Four: Mix just until incorporated. You can switch to a wooden spoon to mix in the oats.
Step Five: Spread ⅔ of the batter into the prepared pan. You will use the rest on top of the fudge.
Step Six: Add the chocolate chips and condensed milk to a microwave-safe bowl and heat in 30-second increments until it is 75% melted. Stir the mixture to melt the rest of the chips.
Step Seven: Pour the creamy fudge over the bottom crust. Spread it to the edges.
Step Eight: Drop small dollops of the remaining batter onto the top of the melted fudge.Some chocolate will peek out.
Step Nine: Put the pan in the oven and bake for 45 minutes.You want the bars to be golden brown with only a very slight jiggly if you jiggle the pan.
Step Ten: Let the bars cool, then cut and serve.
Top Tip
Cutting and storing these in containers or baggies is a great way to have individual bars ready to eat and serve. This is a simple way to also prep snacks and treats for the week.
Substitutions
- Chocolate - Change the chocolate fudge layer flavor. You can use white chocolate, dark chocolate, or a mixture of chips. The chocolate mixture can be versatile and easy to change.
Variations
- Add peanut butter - If you want to add a new flavor and a pop of protein to these Copycat Starbucks Oat Fudge Bars, you can easily do so. Peanut butter is a simple way to make that happen! Almond butter works well, too.
- Add natural sweetness - Sub in a bit of maple syrup or honey for some of the sugar in the oat mixture.
- Add toppings - Drizzling melted chocolate on top of the bars is a great idea. You can also sprinkle mini chocolate chips on the top layers!

Equipment
A hand mixer and a square pan are a few of the equipment needed. You'll also want wax paper or parchment paper, a large mixing bowl, and possibly even a wire rack for cutting and cooling.

Common Questions
How do I prevent these bars from sticking to the bottom of the baking dish?
I like to prepare the pan with coconut oil, as that helps them not stick and also adds a bit of a coconut flavor to the bars. You can also line it with parchment paper.
Do I need an electric mixer for these bars?
You don't have to have one, but I find that when I'm combining the dry ingredients with the wet ingredients, a hand mixer works best.

Ingredients
- 1 cup butter
- 1 cup light brown sugar
- ½ cup white sugar
- 2 eggs
- 1 tablespoon vanilla
- 2 cups flour

Instructions
